Cacao Coconut Chia Pudding

A rich, chocolatey chia pudding made with coconut and oat milk. No cooking required, just mix and refrigerate overnight.

Cacao Coconut Chia Pudding

Ingredients

  • 6 tbsp chia seeds
  • 250ml oat milk
  • 250ml coconut milk
  • 2 tsp cacao powder

Method

  1. In a jar or bowl, combine the chia seeds6 tbsp chia seeds, milks, and cacao powder2 tsp cacao powder.
  2. Stir thoroughly to break up any clumps. Let it sit for 5-10 minutes, then stir again to help the seeds distribute evenly and not sink.
  3. Cover and refrigerate for at least 2 hours or overnight. The chia seeds6 tbsp chia seeds will absorb the liquid and thicken into a pudding.
  4. Stir before serving. Add your favourite toppings and enjoy cold.

Try topping with banana slices, berries, shredded coconut, cacao nibs, oats, or nuts.
